I would like to thank everyone who submitted a recipe for the breakfast recipe challenge. Some
wonderful recipes were submitted
for the challenge. The guest of the Darryl Haley Bed and
Breakfast had a wonderful time selecting and preparing breakfast meals from the submitted
recipes.
Listed below are the two winning recipes. The response to the recipe challenge was so
overwhelming and fun that I am going to do it again. Check back for the next recipe challenge
date.


Susan:
BACON, EGG AND CHEESE MUFFIN (500 calories): Scramble 1 large egg in 1 tsp margarine
and place on a toasted whole-grain English muffin spread with 1 tsp margarine. Top with 1 slice
cooked turkey bacon and 2 tbsp shredded reduced-fat cheddar. Serve with 3/4 cup berries, 1/4
cup low fat vanilla yogurt and 12 oz skim latte

Stacy:
Salmon Cakes
1 Pound Salmon Baked
1/8 Green Pepper Chopped
1/8 Onion Chopped
Old Bay
Salt N Pepper to Taste
1 egg (Beaten)
1 tablespoon Cornmeal (for coating)

Flake Salmon (Remove, Skin, bones, fat)
Add Pepper, Onion & Seasonings
Add Egg
Coat with Cornmeal
Fry or Broil on both sides until caramel brown
Garnish w/ Scallions
